Pairing: Spring Strawberry Salad
The latest vintage of Guardian Cellar’s 100% Sauvignon Blanc is crisp, bright and lovely. The 2021 vintage is from Red Mountain’s Klipsun vineyard. We fermented 60% of the wine in French oak, 40% in stainless tanks. After 7 weeks, the wine in oak was blended with the tank wine to finish fermenting. The result? A Sauvignon Blanc full of notes of white grapefruit, lemon lime soda and white gummi bear. The acidity is bright and zippy, but still super balanced and fresh.
